This is a great pie crust, particularly for pumpkin pie, but it can be used for other custard/pudding fillings. It really helps to start out with pecans from the freezer, because then the butter blends through but quickly sets up so the "mass" is pliable.

My hubby has been doing Atkins and we are always trying new things. Net carbs are about 3g per serving, or 1 carb per meatball.
Hubby likes these because they are so portable, he can put a few in a baggie and eat while hunting or fishing. They taste great at room temp too. I have another meatball recipe that is low fat. I usually make both at the same time - it's rare that hubby can eat the same thing the rest of us do,

Great served with lettuce, tomatoes, bacon, stilton and avocado.
