This is an adapted recipe from one posted on TastyKitchen.com. We don't like green peppers, so we used red instead.
This recipe is adapted from Sunset magazine in 2002. You can of course use low fat cheese and garnish with sour cream if you wish. I think you could use only two 10 ounce cans of enchilada sauce and be fine.

Cut chicken and fresh mushrooms, saute. Add cream of mushroom soup and Alfredo sauce. Simmer for 10 minutes. Peel and slice eggplant into 18 slices. Dip into eggbeater and breadcrumbs. Set aside for layering. Open ricotta cheese and add salt, pepper and garlic (if desired), stir. In a 9x13 pan layer the following: sauce mixture, 8 pieces of breaded eggplant, 1/2 of ricotta cheese: sauce mixture, 8 remaining breaded eggplant, ricotta cheese, mozzarella cheese and sauce mixture. Cover with foil. Bake at 350 degrees for 45 minutes.

I changed this from a Ground beef and Beef broth to turkey and chicken broth soup. If you want the beef, just change the turkey for lean ground beef (same amounts as turkey) and the broth from chicken to beef (same amounts, low sodium)
