I enjoy this omelette because it's very filling and doesn't make me think of dieting. You can also use egg substitute or just egg whites to make it a little lighter.
I use 365 Whey Protein Powder, Flaxseed Oil and 2 tbsp Bob's Red Mill Whole Ground Flaxseed Meal
This is a great way to use up leftover rice and assorted veggies. Great with toast for breakfast or dinner. For a nice presentation, shape serving into round mound on plate, and top with sprinkle of parmesan and swirl of Tabasco.

This is a tasty winter favorite. It uses summer squash, but that's just because I live in South Texas & it's available year round. You can add or remove veggies as you desire, it's still yummy. You can also change the meat, or remove all meat for a vegetarian version.
This recpie works best if you have a cast iron skillet, or similar that you can transfer from the stove to the oven. Otherwise transfer to a 9 inch pie pan before adding the eggs and bake for 15-20 minutes at 350.

Use instead of flour to dredge fish or salmon cakes with prior to pan searing. Very little calories plus fiber content makes it a perfect low-carb "breading" option.
