I had a lot of trouble getting a no flour pizza crust to work. It kept sticking to my no-stick pan even when it was well oiled, and turned out soggy and limp. So I doctored it till it worked, but had to add whole wheat flour. Fine shredded Mozzarella is a MUST for this recipe. Don't use coarse shredded. Fine shredded cheese produces a more pleasant and consistent texture.
This is nothing like a real pizza crust. It's a bit spongy like an omelet and the browned areas are slightly chewy. If you can get past the texture it works well as a low carb pizza crust substitute.
An easy and quick delicious high protein/ lower carb breakfast for one! Recipe can be doubled easily for additional servings. This makes a great brunch dish!

I was cooking breakfast for everyone and found myself frustrated because I was fighting not to eat all the scrumptious foods I was cooking for my husband and son. I was planning on working out and didn't want to work out and feel it would be a waste of time. I needed energy and to feel less hungry. So I made myself a yummy smoothie !
This is this first time putting in a recipe , I have a lighter smoothie called. New Me Smoothie as well. I do like the New me one better because its lighter.
These pancakes are a healthier (occasional) indulgence for all of you looking for a lower carb alternative to tradition pancakes! They do have gluten (Maple Grove Farms mix), but I imagine they can be made gluten free by substituting with more flax meals, or perhaps some coconut flour. I find the blend of flours gives a pretty authentic texture. These pancakes are a bit thinner than your traditional wheat flour pancakes, and you can even thin them out more with an extra 1/3 cup of water for crepes.
Only 3 carbs per serving, this low carb faux potato salad is fine for all phases of Atkins. Can enjoy this warm or cold. Makes 10, 1-cup servings.
