Here is a meatloaf recipe I just threw together and it happened to turn out amazing. My doctor put me on a diet of no more than 1500 calories, with a limit of 90 carbs. I can whip this together and come in at 1457 calories with only 52.5 carbs. There are a total of 54 grams of fat and 160 grams of protein. Make a batch in the morning, and because there ae 12 individual muffins I can tote them through out the day and eat when convenient
1 1/2 to 2 pounds lean ground beef or turkey
1 tablespoon oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt
you may do this with breast, thighs any skin on chicken. so good and so easy!
