This recipe combines two previously posted spinach quiche recipes. I adapted them to suit my needs. Just pop these into snack size Ziploc bags, then into freezer bags and you have a quick breakfast, lunch or even dinner for your busy work week. Just grab a bag out of the freezer and out the door you go.
I saved my ham bone from Easter dinner in the freezer - leaving a good bit of meat on it with the purpose of making a hearty soup. Paired with some homemade wheat bread it makes a filling lunch or dinner. You can add barley, rice, pasta or even a potato or two or leave it low
carb.

I modified a recipe found here on spark people to meet my needs - I'm cooking for one, so I don't need 4 or 5 extra servings as left overs in the fridge. This is surprisingly filling.
I use Davinci SF Pancake Syrup, but I'm sure any flavor would taste great. The texture is surprisingly like regular pancakes.
