Low calorie yummy breakfast. I like to add turkey sausage with this breakfast. Maybe even a piece of low calorie toast!

This is an extremely quick meal to throw together, especially if you use leftover cooked vegetables, meats or poultry. Flax seed oil provides good fat (Extra Virgin Olive Oil may be substituted). This dish is portable if you pack the dressing separately & toss right before serving. Recipe is easily doubled.
I came up with this when I wanted a low carb lunch and had all these ingredients on hand. It is delicious, if I do say so myself!! :o) It would be easy to make a double or quadruple batch, depending on how many servings you needed. Next time I'll try putting some black beans and/or corn into the salsa mix.

Blend softened butter, cream cheese and coconut oil until smooth. Add dry ingredients. Add vanilla if desired. Blend. Pour into greased cupcake pan. 1/2 full sections.

Dice mozzarella and tomato, add chopped basil, chopped onion, salt. Let it cool in the fridge for about 2 hours. Buon appetito!
