IMPORTANT: For best results, the fish needs to sit overnight in the lime juice to 'cook'.
I love this recipe because it is 3 easy ingredients heated together and you're eating in 15 minutes max. If you are like me, you try to cook on the weekend and have stuff you can throw together when you get there. If you have the time, you can cook the rice, it just adds time.

Make a double batch of this quick vegetarian chili, full of black beans and sweet potatoes, and eat it for lunch the next day or freeze the extras for another night. I love the smoky heat from the ground chipotle, but omit it if you prefer a mild chili or substitute with cayenne if you want it hotter.
Slice all the ingredients. Slice chicken breast. Place on a hot grill. Then add the cilantro at the end of cooking.

3 cups fat-free chicken broth
1 1/4 cups finely chopped celery
1/2 cup diced sweet yellow onion
3 cups green enchilada sauce
One 15-oz. can pure pumpkin
10 oz. cooked boneless skinless lean chicken breast, chopped or shredded
1 cup frozen white (or yellow) corn
Optional: dash hot sauce, or more to taste
Optional toppings: shredded fat-free cheddar cheese, crushed baked tortilla chips
I like to serve this over sunflower cracked wheat toast , with some grated cheese , and a little plain greek yogurt on top .
My husband and I like this any time of year, but especially during winter! Add some toppings such as shredded cheese, avocado and sour cream. It's so easy, just add to the crock pot and yum!
