Light & Creamy Potato Salad Light & Creamy Potato Salad

    10-12 Yukon Gold Potatoes
    6 Large Hard Boiled Eggs
    1 Cup Light Mayonnaise
    1/4 Cup Chipotle Mustard
    1/2 Cup Scallions (Optional)
    1/4 Cup Diced Red Pimientos (Optional)
    Salt & Pepper to taste (Optional)


Remove skin from potatoes & boil until semi tender, do not overcook.
Meanwhile, cook 6 large eggs in water until they are hard boiled. Set aside to cool.

Drain the potatoes well & mash with fork until the texture is chunky (to your liking). Season with salt & pepper.

Mix light mayo & mustard well. Coat potatoes with mayo/mustard mixture. Add the diced pimientos, scallions & eggs. Mix lightly until all the ingredients are incorporated.

Refrigerate at least one hour before serving.

  • Sounds good, but I think I would use real mayonnaise, maybe half the amount, mixed with yogurt and mustard. Nothing beats the real taste of Kraft Real Mayonnaise. - 5/12/09
