This soup is my own recipe and is hearty and delicious and heart and soul warming. Additionally, it has a fairly low carb count. Makes approximately 10 one-cup servings or 5 two-cup servings. The nutrition is calculated for one cup.
Served on crisp slices of peeled (or not) cucumber, this is a great small meal if you like or an appetizer in even smaller servings.
Robin Pau' Leota adds a lot of rice to this, but I make it without in order to get the carbs down low enough to enjoy a piece of 85% dark chocolate later.

I make this on Sunday afternoons and divide into Tupperware-style containers to take with me to work. Reheats well in the microwave.
A low carb favorite in our house. This is traditional chili con carne and that means no tomato sauce and no beans. It is to be served over steamed rice or cauli-rice for low carbers. Garnish with shredded Cheddar and/or sour cream.
