I got this recipe from Taste of Home and changed it to suit the ingrendients I had on hand.
Spicy chorizo, sweet mango, and tangy tomatoes...all wrapped up in a bell pepper.
Super easy dinner, and one of our favorites. Nutritional info is for basic sauce, part skim cheese, and regular pasta, so there is a lot of room to cut calories on this one. Add garlic, onion and your favorite seasonings for even more taste.
We love Swedish meatballs. Trying to make a lower fat variety that my boy would eat became a challenge, until I tried a 50/50 mix of 93% FF beef and ground pork loin. He loved it. Also, I don't flour and pan fry the meatballs. I dunk them in boiling broth for 1-2 minutes, then finish them in the sauce.
This is such a great meal to pop in the crockpot before heading out for the day. Smells wonderful when you walk in the door!
