I highly recommend fresh Alaskan Wild Caught Salmon, but any salmon would work.
The sauce listed here uses fresh dill, but fresh tarragon is also very good.
In a pinch you can also use dried versions of these herbs, but it is not nearly as tasty.
I use coconut flavoring insted of the coconut some times to save caliories, and Pecans instead of the Rye crisp when I don't mind the fats.
I took a Kraft foods receipe and modified it for the salmon patties. I then added the chutney to finish it off and to add a different element of flavor.
