This is a light version of another Tilapia recipe on this site. I do not take credit for this wonderful recipe, I just lightened it up a little bit! My family loves this recipe!
Can use fellet of red snapper, sole, halibut or other whie fish
This is a take off of Abuelo's Pescado Guerrero without the creamy white sauce
It doesn't heat up the house and is easy for the summer. You can use canned veggies like I did or go all out and use fresh. Previously frozen, thawed Swordfish steaks work fine as well.
I lighted up this old recipe from the McCall's Cookbook (1973) and switched a couple things around - always a winner for my family; there were no tuna pouches and high protein choices back in the day!

bread the tilapia by dipping in egg white then covering in bread crumbs. place tilapia on cookie sheet, drizzle a bit of oil on each tilapia and bake for 8-10min under the broiler. serve.
