A one-pan dish that is simple and light. Japanese buckwheat soba noodles are a great low-gluten, protein rich alternative to other pastas. Garlic and soy sauce bring flavor that the noodles soak right in, along with a lot of crisp and tasty veggies added in. A handful of tasty shrimp rounds out the dish.
Don't let the sauerkraut scare you off. By rinsing it, you get rid of a lot of the sodium (my guess is the nutritional info shows too much) and all the apples mitigate the sour taste of sauerkraut.

I have adapted this recipe from a south african tuna tart. The doritos and cheese gives it a unique flavour. I have used a white, spicy cheese in this recipe but mature cheddar will just work fine.
