A take on Lobster Salad. Wonderful on a toasted bun, crackers or over lettuce. Fat-free plain Greek yogurt adds a richness similar to sour cream, but with added protien and no fat and very few calories. Optional: Stalk of diced celery and a bit of diced onion. A breeze to throw together!
We served this with roasted asparagus (drizzle with olive oil, sprinkle with salt and cook at the same time as the fish).

This is a creamy and delicious soup that I make whenever we buy a bushel of sweet Apalachicola oysters. If you can't find fresh oysters in your store, frozen or canned works well in soups. Also a good base for any kind of "cream of" soup.
