Very filling meal that you can vary with chicken, ground beef or sliced beef. The recipe is for ONE; to use an entire bunch of asparagus from the grocery, multiply by 6. This is a filling meal, so additional courses aren't necessary.
Quick and easy use of tuna. High in protein and goes well with a large salad.
1 9"frozen pie crust
6 oz. Portabella mushrooms, chopped
1 cup green onions
2 tbsp. olive oil
2 cups imitation crab meat
4 large eggs
1 cup half & half
1 cup mozzerella cheeseshredded)
1 cup sharp cheddar cheese (shredded)
This was a adaptation of a recipe for Crusted Tilapia Florentine that we found in the grocery (Meijer) ad. We didn't have any spinach on-hand; so, we used a can of green beans instead with great results! The recipe called for Italian-style breadcrumbs, but we made our own using whole wheat panko, bran flake crumbs, and Italian seasoning.

This was inspired by the summer salsa blog, so is full of flavor, but low on fat, and also is a quick and easy meal for us working women! Serve with a side salad or steamed asparagus tossed with lime and red pepper for a complete meal.

Typically, there are between 20-40 scallops to the pound. They are most commonly sold as fresh, shucked meats, by the pound. Look for scallops with an ivory or pinkish color and firm meat.. Scallops have a very firm, but tender, texture and a distinctively sweet flavor.
My twist on tuna noodle casserol. You make the sauce seperat and pour over your noodles or rice on each plate. This way the ratio of tuna to noodle is more fair. I always feel like in the casserol you never get any tuna. I serve it over half a cup of couscous for each person. For us it serves about 3.5. Also we use lacataid instead of regular milk as regular milk hurts my tummy.
An easy dredge mix for sauteed fish. Not meant to be terribly flavorful. Its mostly as a base for fish that you already have a sauce, chutney/salsa, or dressing planned for (thus, they would provide the flavor) however I imagine you could add spices like powders of garlic, onion, lemon, paprika, etc to your tastes.
