My friend Jolena first introduced this recipe to me and I loved it. It's got the sweet, salty, crunchy and creamy all wrapped into one dish. You can eat it with triscuits or wheat thins (which I do not have calculated in the nutrition). Each serving is 4T.
I first got the recipe from a Suzanne Somers site and have altered it a bit. My 3 year old ate almost 6 oz all my himself tonight. This is great as a side dish with meatloaf! I would cut the serving sizes down, though. I calculated it for 4 dinner size portions and we eat it with a salad or small piece of meat like grilled chicken. But you could make six servings and eat it with meat loaf. The nutrition would then be 169.1 cal, 9.2 fat, 9.4 carbs, and 12.5 protein. Yum, either way!
I was having a Cinco de Mayo party and also love brownies so decided to experiement. Here is the yummy result! very easy, too!

Whole fruit blended into sorbet. Try Banana and Mango together top with toasted coconut. Or Do this recipe with just Mango. Use any berry you like. Or mix them up. Plain Banana with PB powder is healthy & delicious as well. Top with chocolate syrup &/or chopped walnuts.
This is a great salad served inside a whole-wheat pita with lettuce, salsa and a wedge of avocado. Great with tortilla scoops to serve as an appetizer.

INGREDIENTS Carbquick or gluten free flour 1 cup Baking soda 1/2 tsp Baking powder 1 tsp 1 tb sp Guar gum or Xanthan gum Eggs 3 Cinnamon pd 1 tb.sp Chocolate Isolate Protein Powder 1 and half scoops Olive Oil 1/4 cup Water room temperature 1/4 cup Chocolate Chip NSA approved 3 tsp +1 tsp for Phase one. Double it for phase two. Will make 12 Muffins Recipe Whip egg white for 5 minutes on high. Keep aside. In seperate bowl add oil, egg yolks, water, vanilla paste, protein powder, and Cinnamon powder. Mix well until creamy and no lumps. Now add flour, baking powder ,baking soda and Guar gum, mix it well. Make thick batter like cake batter. Now fold egg whites and 3 tsp of chocolate chip. Greased muffin tray with oil and dust with carbquick. Pour one scoop in each muffin circle. Sprinkle with few chocolate chip. BAKE at 160C for 20 to 25 minutes in pre heated oven.m
I usually double this because it takes quite awhile to put together. I package it into 1 oz. bags for work snacks.
This is a beautiful fruit dish for a party. Best if made in a clear bowl as it is very pretty.
