This is a healthy high fiber guilt free pizza that tastes great! I regularly make this for myself and my daughter. We usually eat two slices for dinner (which comes in at less than 500 calories) and save the other two pieces for breakfast the next day.
1.Sauté bell pepper and onion, in half the oil, adding pepper and cumin.
2Add turkey to the veggies with the cilantro and juice of half a lime
3. Put turkey and veggies in tortilla, topping with cheese, distributing evenly and fold in half.
4. Rub remaining oil in a new pan to coat, heat up then cook the tortillas on both sides on medium heat till light brown and cheese is melted.
5. Put on a plate, cut each quesadilla in 4 pieces with a pizza slicer, cut other half of lime in to 3 wedges.
6.Serve with lime wedge, sour cream and Pico de Gallo.
