A delicious, healthy side dish that can add to any summer BBQ! OR pair with a turkey burger in the winter to break the "winter doldrums!"
I combined several items from different recipes to make this my own!
Backpackers that prefer our own gourmet creations rather than those instant, factory bagged meals available in the stores . . . so before a trip, we're preparing our favorite dishes to dehydrate. Lightweight once dried, we package in zip lock baggies and we're good to go. When dinner time rolls around at camp, we simply bring water to a boil, add our dehydrated food, rehydrate . . . and enjoy.
These are great for a snack if you are on a low carb/high protein food plan. Two or three with a salad would be great for lunch.
Subtracting the indigestible carbs, this is 13 g total carbs per serving. To make it non-low-carb, use about 1 and 1/2 pounds of pasta tossed with 3 or 4 Tbsp olive oil. It is adapted from Williams-Sonoma/Time-Life "Pasta Sauces" 1994 ISBN 0783502834. Travels beautifully.

if you love pasta salas heres a great way to eat it with a hint of cilantro yum
great on a pita pocket or whole wheat bread. Pack in tupperware and it's a great on the go lunch! The yogurt give this a tang and the mayo makes it creamy, while the celery adds that special crunch!
