This dish is great for pot-luck dinners -- make the night before to let the flavors blend. Also easy to turn into an entree salad, add diced chicken breast for a light summer meal.
Refreshing and healthy combination of your favorite fruits perfect to eat by itself or with jello, fat-free whipped cream, ice cream or yogurt.
This is a refreshing springtime or summer salad. The dressing is very light. Makes a nice side dish or sometimes I eat it for lunch
A favorite lunch.
Santa Fe refried beans are already dehydrated and available in some grocery stores or on Amazon. I have dehydrated canned refried beans and like Santa Fe brand better.
The True Lime really adds a lot of flavor! Reminds me of Chipotle Restaurant tortilla chips.
This is an unhealthy (but so delicious!!!) lunch which should, obviously, only be eaten while hiking! At least it is Spam Lite. Can you say "health halo"!?!?
Spicy mustard makes this much classier!
Great spread for sandwich. I likie it with chopped carrots and green pepper to make a cruchy filling sandwich. It's also a nice snack with celery sticks.
This is a low-fat, fresh salad perfect for dinner on a hot Summer night. It can be prepared up to one day ahead and kept in the fridge.
If you like, this delicious spicy salad also makes an excellent side dish with a difference for a BBQ, cookout or picnic.
**Note: The fish sauce in this recipe makes this meal VERY high in sodium so if you're on a low-sodium diet probably best to steer clear or substitute the fish sauce with either miso paste (746mg sodium), a strong vegetable stock, or, for a slightly sweeter flavour, Kecap Manis (534mg sodium).***
I had put together a marinade for tofu that I planned to bake later in the day. Once the tofu had soaked up what it needed from the marinade I had a ton left and I didn't want to waste it so I came up with my own little version of a Southwestern type of Pasta Salad. My version took a little bit longer than if you already had the ingredients prepped and ready to go. (I soak my own beans and juice my own fruit) You can substitute with any veggies that you like. I choose an orange pepper for the color and mild flavor- but green would be good too. I added the zucchini for a little more of a green punch- lightly wilted spinach would be good too. The tomatoes I decided to add as a garnish since of few of my family members do not care for them- but I think you could mix them right in and it would still be yummy. Finely chopped Red onion would go well too if you wanted it, but I thought it had enough zest without it. (Onion is another thing that the family isn't crazy about) This zalad just reminds me of summertime family picnics with the refreshing hints of lemon and lime and the zest of the cilantro.
This is a home style salad with slightly reduced calories due to the reduced fat mayonnaise. The small amounts of salt, paprika, rice vinegar and mustard can be adjusted to taste, but are really essential to the overall flavor of the dish.
