A refreshing salad for a hot day, this contains 75% of your RDA of Vitamin A. I use white pepper rather than black in this recipe because it has fewer aromatics and enhances the taste of the canteloupe. Also I find I can get away with less salt if I use white pepper.
An unusual but more-ish salad, nice as a side dish with cold meat but also good as part of a mixed sallad plate - I like it with tomatoes, chick peas and black olives.
This is not a low fat dressing, but a little is a good as the top tier dressings you can get at restaurants. I've tried it with low fat mayo and sour cream, and it gets a little runny
Cut up vegetables of choice. Toss with fingers add reduced fat feta cheese. Toss. Pour 1/4 cup Good Seasons light vinaigrette over. Mix gently allow to sit for one hour or more in refrigerator. Good for three to five days. Stir before serving.
I took this to a potluck and it was gone so fast I didn't get any! You need a food processor or good blender to make it.
This is a nice cool , lowfat,fruity salad my Grandmother used to make.It tastes so good on those hot days.Leftovers are even good @ breakfast.

For all you Raw Foodies or just curious, here's a great summer salad - all raw - using the bounty of the season. Wash and tear lettuce and spinach into a large bowl. Slice the kernals off of half of an uncooked cob of sweet corn. Slice sweet peppers. Separate the rings of the onion and toss all into the salad bowl with the lettuce and spinach. Slice the avocado and set aside. Half each of the cherry or grape tomatoes and set aside. Portion the salad into 4 bowls. Top with Avocado slices and ring each bowl with tomato halves. This salad is so creamy with the avocado and sweet from the corn and peppers that I don't use any additional dressing. You might want to squeeze a lemon or lime over the top.
Variation: You could always toss in a few Pine Nuts and Raisins. That's always nice. But I like it best just the way it is above. Enjoy!
