Vegan, raw and delicious! This can be made using cooked chickpeas and mung beans, but I love the crunchy, earthy taste! Raw sprouts are an excellent source of protien and contain live enzymes which are beneficial for your own digestion and health.
A salad that I grew up eating. A family friend of ours from Germany always made this amazing salad at his get togethers. It is full completely brimming full of vitamins and minerals, and is a meal in itself. You may want to add or lessen some of the ingredients to your taste, such as the corn or onion.

This is what I made for New Years Day 2011--very basic and pretty good (feta cheese optional and not counted in the figures). I used yellow bell pepper, but same basic thing as far as calories goes.
