I used Sprouted Mung and Not BOILED in this case, how ever u can make the same salad in Boiled form also.

The colors of this salad are absolutely amazine - purple, orange, pink, green. And it is delicious. I always make a double recipe for pot-luck picnics and there's never any left.
If you don't have pine nuts, you can use any other kind of nut for a little crunch - or just leave them out. Enjoy!
Sooo Good! I paired it with maple-soy roasted salmon (another of my recipes) & toasted whole wheat sandwich thins (spread with 2 teaspoons smart balance light with flax). It was less than 500 for a complete nutritious meal.
This recipe is for one person at the resturant but (and should) can easily be served up to 2 people
