I made this from the "Stop the clock" recipe book. Due to illness, I've been trying to include more anti-oxidants in my food and this recipe has a high orac content.
My mom just whipped this up on a whim tonight and i is a good way to get in that seafood
this is a salad dressing that is added to spring mix greens, cranberries, glazed walnuts, and gorgonzola cheese crumbles. Top with grilled chicken and you have a nice lite heart healthy meal. Recipe yields 2 1/2 cups or 40 servings. Can be refrigerated for several months. Serving size is 1 tbspoon = 74.5 calories.
I like to make my own dressing- it tastes better and has no preservatives and I can control the salt.
Just thinking about this vinaigrette makes my mouth water. My aunt made this for me and then gave me the recipe a few years ago. I could eat it every day. It is best paired with dark greens like spinach or field greens; don't even think about wasting it on regular lettuce... It is packed with flavor, so a little bit goes a long way!
I like coleslaw but I really don't like the sweet dressings or mayo in my dressings. This makes a very rich tasting dressing but all healthy fats.
If you like a more sweet taste, you can add a sweetener.
