This is my version of a fiber blend like metamucel. No sugar or anything artificial. The spices each have a health benefit for the colon. I take I tablespoon a day in a glass of water with about 1 oz of juice. All ingredients should be finely ground.
After making a full fat pumpkin cheesecake for a family gathering, I came up with this low fat, low calorie version for myself. I was impressed with how satisfying it was!
I love this stuff. It's a great snack to give to yourself or your kids. It's just cut up cucumber put in a cup and add Chile Powder with a bit of salt and some Lemon squeezed over it about a tablespoon full. I like to use this stuff from the Mexican Store and forget the name of it but it comes with lemon powder, chili powder and salt already mixed up in a little bitty can that's a bright green in color or a bright red in color and it's sold in the candy isle because the Hispanic kids just love it. My daughter knows the name of it and when I get it I'll add it here but in the meantime just use the above ingredients and mix it all together and it's great chilled. It's great on a hot summer day as a snack.

This oatmeal I make a day or two ahead of a hectick time when time is very limited in the kitchen for breakfast. I make this and cover them and stick them in the fridge until I need them. I pull one out while the coffee is brewing and stick it in the microwave for a few minutes until warm and eat while getting myself and my son ready for the day.
Use this over pancakes, ice cream or whatever you like! Great taste without all that sugar! My Son loves it!
The original recipe calls for sugar and oil. I changed it a little to meet the needs of my family. I got this recipe from Penzey's Spice Store.
Combine flour, baking soda, baking powder and salt in one bowl.
Combine bananas, egg, erythritol, and vanilla in another bowl. Mix well and then add applesauce.
Add dry ingredients to wet ingredients, mix, and divide into 14 muffin cups.
Bake for 15-20 minutes at 350 degrees, or until a toothpick comes out clean.
