I will be cutting the sugar in this recipe down to 1 c, I am leaving it at 2 c until I finish this first batch, it is trial an error, the first batch is great, just a little sweet.

Modified from Mark Bittman's Split Pea Soup recipe. Simple, rich, great stats, and absolutely delicious.
I modified this from the Cook's Illustrated recipe, and decreased the amount of sugar, butter and shortening. The secret ingredient--vodka! It adds moistness to the dough without adding gluten formation, and the alcohol evaporates during cooking.
The only difficult part is cubing the squash. A good, sharp knife is key. I left out the 1/2 C whipping cream and creme fraiche garnish to reduce fat and calories. I used plain apple cider.

Its not that low in cals, but compared to some desserts, its pretty darn good! (and its tasty!!!)
