Introduction

Ingredients

    1 tbsp olive oil
    1 cup chopped onion
    5 oz diced ham, trimmed of fat
    2 cups split peas
    1 small russet potato (about 100 grams)
    4 cups low sodium chicken broth
    2 medium carrots
    Salt and pepper to taste (recipe calc for 1/2 tsp kosher salt)

Directions

Saute onions and ham pieces in olive oil in a large pot until onions are soft and ham is very brown and crispy. Add peas, broth and potatoes -- add enough water to cover. Simmer for 45 mins - 1 hour until peas are very soft. Add more water as necessary. Mash with a potato masher, or give a few blasts with an immersion blender. Season with salt and pepper. Steam the carrots in the microwave for a few minutes, then add to the blended soup. Cook for another 15-20 minutes, until carrots are soft and flavors combined.

Makes 6 2-cup servings. Delicious with croutons, cheese, crackers, crispy bread or just on its own.
