Our BBQ veggie stir fry can be served alone in a bowl, or on top of rice (leaving out the potatoes) - doctor it with what you have. Corn works well in it, jalepenos give it kick... try it!
We just pile all the veggies we like into a wok, sautee them, stir fry them, glaze them with a diana sauce (barbecue sauce) sprinkle on some hot sauce (BullSnort brand Cayenne Sauce is the best - or Frank's Red Hot works)

This is very filling and with lots of fiber and protein, it makes it the perfect anytime snack or meal. You don't have to be precise on the measurements, I just use whatever amount of each veggie that I have at the time.
