great, used 1/4 cup brown sugar and 1/4 Swerve sugar replacement. Great flavor and texture. No need to look further for a great Pumpkin muffin recipe.
Too much salt. That can be less.
Wow 1tsp salt??? No.....I only used a 1/4 tsp. Only got 9 decent sized muffins. Didn't bother with 'pastry' flour...just used regular wholewheat spelt! Came out really nice.
These are a new favorite at my house. They were very easy to make (I made some substitutions based on what I had- a flax egg since I was out of eggs, Splenda and some molasses for the brown sugar since my brown sugar was a brick, and I used my own pumpkin pie spice mix). Will definitely make again!

I love this recipe as well as other recipes from this site(Fannetastic Foods). The muffins have good texture, just sweet enough, and very little fat. A healthy muffin.
Most excellent and very moist despite the lack of oil! Great way to use the Halloween pumpkin I bought but did not carve. I added 1/3 C ground flax seeds for the nutritional benefits. Nothing better than a pumpkin muffin and a cup of coffee in the morning. Mmmmmm.
