I always add a sweet pepper or two. Great over pasta, rice, veggie sausages, chicken, tofu - whatever you have. Makes a tasty sidedish, or add in some beans for protein.
Yum, this is one of my favorites, in the summer I saute yellow or green squash or both with onion, garlic and red or green peppers with salt, pepper and oregano. In the winter I saute peppers, onion, squash and oregano and add spagetti sauce and pour it over pasta! Very hearty and no need for meat
My son sprinkled Parmesan cheese on top. This is a keeper. I have also taken Zucchini and sauted it with onion and added Reduced fat cheese, then sprinkled crushed reduced fat Ritz on top for my other son that doesn't like tomatoes. Yum!
Wow, great recipe for fresh vegetables. The beauty of it is that you can add whatever you have on hand. I added a bit of salt and pepper.
my mom has always made something very similar to this. . but she adds Italian seasoning to it.. also green peppers.. or any color peppers.. but.. ( she adds the small cut round pepperoni!) delicious!then at the very end, she tops it off with low fat mozzarella cheese, just til it melts! just a bit!
I make this in the summer .... great dish. I also let fat free cheese melt toward the end of the sautee.
