Nutrition & Calorie Comments  

This was very good but I wish the sodium was a little lower. I will try some modifications and make again.
I really enjoyed this version of crock pot cooking. I used the No salt version of Rotel and lower the sodium and replaced the beans and peas with riced cauliflower (can't have legumes). It was very flavorful! I will do this again!
This was awesome... I read the notes and I'll add capers too but leave out the peas. My friend from Spain never used peas and I try to avoid them w/ their high sugar content, plenty of other veggies to use instead, but that's me!
Very good. Never toasted almonds before with paprika - interesting. Tripled chicken but not all ingredients so not a true picture. Froze some for Thursday and will try suggestion below: feta cheese....next time add beer, green olive...etc.. Family wanted more salt... go figure.
My mom made a spanish chicken in the crock pot using beer, green olives, and tomato paste. To lower the calories I use less green olives and some capers. I also use less beer. This looks like an interesting option. I think I'll try it. Another interesting option.
