These were very tasty. I salted the zucchini after shredding them and let them sit a bit, then pressed the moisture out. Glad I did that or they might have been too "runny". Otherwise, followed the recipe and my family liked it. Even the picky 7 year old ate a whole fritter.
Wowza!! This is AWESOME! I just made this tonight and the 4, 10 and 12 year olds all gave it a thumbs up! I added a small dollop of low fat organic sour cream to the center of each cooked fritter and that also tasted very good!
