Looked on SparkPeople recipes for a creamy asparagus soup. Made this for lunch, following the recipe except that I had only fat-free sour cream. It is delicious and a recipe I plan to save. It would make a wonderful "cup of soup" to begin a meal.
This was a very good, easy, low calorie soup! If you love asparagus, you should try this recipe.
I needed just a bit more salt, overall a great recipe!
This was excellent! I didn't have quite enough sour cream, so I used a little nonfat Greek yogurt to make up the difference. With a slice of crusty bread, it was the perfect cool weather lunch.
I had leftover asparagus from Easter, so decided to give this a try. It's just delicious -- and the calorie count is excellent. This will be something I make regularly now!
Delicious! I used fat free sour cream and it came out great!
Made this for dinner tonight. Substituted thyme and non-fat plain yogurt for the bay leaf and sour cream. Added a bit more salt and sprinkled about a tbs. grated parmeson on top. Recipe is easy and tasty--will make again.
I used nonfat yogurt instead of reduced fat sour cream and added a cup of fresh chopped shitake mushrooms
