thank you for this absolutely yummy recipe!!! My entire family enjoyed it, even my "meat and potatoes" husband. The only thing I added was grilled chicken breasts, diced, for a little more protein. We also ate it over brown rice.....yummy!! The cilantro was such a wonderful garnish, too
