Great lunch salad. Very satisfying. I also used feta cheese (fat free) in place of goat cheese.
Wonderful hint of Spring on a dreary winter day! Used feta cheese and sugared pecans picked from Valdosta snack mix.
A salad of Spinach + fruit+ Nuts and/or cheese with balsamic vinagrette is a staple at my house. Nuts are usually walnuts, almonds or pecans, cheese a low fat white cheese. If I use ruby red grapefruit will skip the cheese and add avocado, maybe a creamy dressing.
