Nutrition & Calorie Comments  

Finally---a recipe that has healthy whole wheat flour. Today is "Bake and Take Day" sponsored by the South Dakota Wheat Commission. This is a recipe that uses lots of South Dakota produced products---a great choice for me to make today to share with my neighbors. I decreased the sugar by half.
Used Brown sugar Twin, comes in a box, worked out well, but cut that rhubarb small so it is not raw.Eat them fast, the flour makes them hard as rocks quickly!
Fantastically delicious!! Rhubarb is my favorite. I'll eat it raw or dip in some sugar and munch on it. Now, these muffins would be even better if you add strawberries in and have strawberry rhubarb muffins!! Yummmmm!!
I made these muffins, but used white flour and milk with vinegar. I cut the brown sugar down to 1/2 cup. These muffins were moist and really tasty. Next time I make them I will try to have buttermilk and see how different they will be. With my changes, they were great.
Looks so good and low i calories! Will definitely try!
