I have been making 7 layer salad for 40 years, but we use celery instead of peppers and there are three layers of lettuce. We also do not mix it up, just use a large serving spoon to dig down to the bottom, like a truffle dessert! I also use Miracle WHip,, we do not eat mayo..
    This is an easy dish

Instead of green peppers, I use chopped tomatoes. This is one of my husbands favorite meals - with a little bread it is wonderful. Remember - I said "a little" bread for us healthy eaters! - 11/11/09

What could I use in place of green peppers? I love them, but they give other people in my family heartburn. I still want it to taste good though... - 1/23/09

MAYBE A DIFFERENT TYPE OF ONIONS THAT COMPLEMENT THE OTHER ONIONS, WALNUTS OR PECANS, MAYBE SLICED APPLES, SQUASH.....

My recipe adds tomatoes and a little sweetener to the mayonaise/sour cream mixture. I usually only use about 1/2 pound bacon to keep the cal. count down and also only about 3/4 of the mayo/s. cream.
I think the addition of carrots like Celticmaiden2 indicated would be an excellent addition!

I use fat-free mayo or lite mayo, lite cheddar cheese, sprinkle 2 tablespoons splenda over lite mayo layer. I layer sliced thin carrot, drained sliced water chestnuts (excellent),
celery, even left over turkey or ham, drained kernel corn, use your imagination...
