Ingredients

    1 onion, chopped
    1 Tbsp. olive oil
    1 cup cubed extra lean ham or canadian bacon
    4 cups sliced carrots
    4 cups cubed potato
    4 cups cut green beans
    salt and pepper

Directions

In a large stockpot saute onions and ham in olive oil until onion is tender. Add all remaining ingredients. Season with salt and pepper. Add two cups of water and bring to a boil. Simmer until veggies are very tender, stiring occationaly. Add more water when needed. Consitency is to be that of a thick chowder. Mash veggies slightly when fully cooked.
