Introduction

Ingredients

    2 eggs
    1 cup skim milk, or milk substitute. (I used Darifree)
    1 1/2 cups cornmeal
    1/4 cup flax seed
    3/4 cup Bob's Red Mill Gluten Free flour
    1/4 cup raw sugar
    1 TBS Baking Powder
    3/4 tsp salt
    tsp xanthan gum (optional)

Directions

Heat oven to 450. Line muffin tin with papers.
Mix ingredients into a bowl, and drop them in by 1/4 cup each.
Bakes at 450 for 15 minutes.
Makes 12.
