Introduction

A smaller serving, lower calorie version of a sweet corn muffin with splenda instead of sugar and applesauce instead of oil. A smaller serving, lower calorie version of a sweet corn muffin with splenda instead of sugar and applesauce instead of oil.

Ingredients

    1/2 cup Yellow Corn Meal
    1/2 cup sifted flour
    1/4 cup splenda
    1.5 teaspoons baking powder
    .5 teaspoon salt
    2 TBS applesauce
    2 TBS half n half
    1 egg beaten
    1/8 - 1/4 cup water to make a smooth batter

Directions

Preheat oven to 400 degrees.

Mix together dry ingredients and set aside.
Mix applesauce, half and half, egg and 1/8 cup of water together and add to dry ingredients.
Add more water if batter is too thick - is should be a smooth consistency, not stiff.

Pour into 6 serving muffin tin or (and 8 inch square or loaf pan) and bake 20 - 25 minutes until tops begin to brown.

Serve with (not included in nutrition counts) butter, spray butter, or margarine if desired.
