Introduction
This fresh salsa tastes the best during the summer time when the Plum or Roma tomatoes are ripe and juicy, but not mushy. I adjust the amount of cilantro and jalapeno I use according to the friends attending the gathering. The spicier the better. Fresh cilantro is a must. You can add salt and pepper if you like but I have found that with all of the fresh flavors of the ingredients, it is not necessary. This is just what I was looking for in a fresh salsa. I made it last week and it was gone in days, so today I made it again. My husband is not fond of cilantro, says it tastes like soap, so I substituted parsley. Today as an experiment, I used basil. It didn't seem to make much difference. - 9/16/12
