Introduction
Not only does this cornbread recipe taste great, it sneaks in nutritionally packed sweet potatoe and whole grains, with noone the wiser. It also uses "healthy fats" and sweetener that doesn't cause a blood sugar spike. If you are wanting a lower fat version, replace half the fat with applesauce or more sweet potatoe. We've also added some finely diced jalepeno, just for kicks, and it was great! Ingredients

1 cup whole wheat pastry flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/8 tsp allspice
1/2 cup cornmeal
1/2 cup soymilk, rice milk or low/nonfat milk
1/2 tbsp apple cider vinegar
egg replacer equal to 2 eggs
3/4 cup cooked, mashed sweet potatoe
4 tbsp coconut or olive oil
1/4 cup agave or maple syrup
Directions
Preheat oven to 375 degrees. In a large bowl, mix together the dry ingredients. In a medium bowl whisk together the milk, vinegar, and egg replacer. Fold in the remaining ingredients.
Add the wet ingredients into the dry and mix until well incorporated. Pour into lightly oiled 8 inch square pan. Bake for 25-30 minutes, or until toothpick comes out clean.
