Ingredients



    * Ground beef, lean, 16 oz
    * Carrots, raw, 1 carrot (7-1/2")
    * Parsnips, 2 parsnip (9" long)
    * Pacific Natural Foods Beef Broth, 1 cup, 7 serving
    * Beets, boiled, 2 beets (2" dia, sphere)
    * Zucchini, 2 cup, sliced
    * Olive Oil, 6 tbsp
    * *Potato, raw, 2 large (3" to 4-1/4" dia.)
    # Parsley, 10 sprigs
    Parmesean Cheese

Directions

Heat olive oil in a saucepan on medium for one minutes. Sautee carrots and onion until onion softens, about 5 minutes. Add ground beef, and sautee for another three minutes. Add the rest of the chopped vegetables.. really, you can use any vegetables you have lying around for this recipe... the broth, the canned tomatoes and the parsley. Heat on medium-low for 30 minutes. Salt to taste and add a pinch of parmesean cheese.
