Introduction

A lovely refreshing and cooling dip. It's also delicious as a thick creamy dressing with chicken salad – except, with a fraction of the calories. A lovely refreshing and cooling dip. It's also delicious as a thick creamy dressing with chicken salad – except, with a fraction of the calories.

Ingredients

    1 large aubergine (200g)
    1 garlic clove (opt)
    1/2 tsp salt
    1/2 tsp ground black pepper
    1/4 tsp ground cumin
    2 tbs olive oil
    1 tbs chopped coriander/ parsley

Directions

Preheat your oven to 190˚C

Bake the aubergine whole with the stalk left on for 40 minutes, or until brown and soft to the touch. Leave to cool, then peal.

Liquidise until smooth with the spices.

Stir in herbs. Serve on flat breads, crackers or as a dip with crudites

    Incredible!
    Loved it!
    I used no Garlic in mine.
    I only had cumin seeds, I lighted roasted them with oil in a pan then crushed them up, I used half a tsp, not 1/4 so it had a nice spicy aftertaste kick to it.
    I also used only parsley.
    It is delicious, I pretty much ate the whole thing myself...

    Great even without the oil. Will be using it as a dip with crackers whenever I have friends around.(lovely with a glass of wine!! ;) - 12/9/10
