Ingredients

    Soba Noodles, 1 cup (about 1/4 of a 250 g pack)
    Peanut Butter, smooth style, 2 tbsp (crunchy would work too)
    Ginger Root, 2 tsp
    Onions, raw, 1/4 medium
    Garlic, 1 clove
    Chicken stock 1/4cup
    Shelled Edamame, frozen, unprepared, 1/2 Cup
    Carrots, raw, 1/4 cup, grated
    soya sauce, .scant tsp (splash)
    vietnamese hot sauce if desired (not in nutrition info)

Directions

make the sauce; blend all ingredients except noodles, beans and carrots in a food processor, magic bullet, or whatever until smooth. At this point i throw my still frozen peas and carrots in a container and pack it for lunch with dry noodles.
cook noodles according to package or rince in cold water, place in a microwave dish fill halfway with water, and microwave on high for 5 minutes, or until tender. pour off water using a fork to strain

in same dish, or back in pot from boiling water, mix in sauce; cook for another 1-3 minutes until carrots are tender.
