Introduction
This is a very easy, organic, sugar-free, low fat, low-calorie, diabetic-friendly, muffin mix that is healthy for anyone watching what they eat. Of course, you can substitute for more 'regular' ingredients as I will mark in the list. Ingredients

1 C. steal cut or rolled oats, organic
3/4 C. Unsweetened Almond Vanilla or regular milk [can use low-fat cows, or low-fat goat, Soy, etc.]
1 C. Whole grain baking flour, organic [or non-bleached white, or rice, Spelt, Oat, etc}
1/3 C. Splenda [or 1 1/2 tsp Stevia powdered or 1/2 C sugar]
1 Large Egg, organic [or egg substitutes]
1/4 C. Applesauce, unsweetened, organic [or 3 Tbsp. cold pressed, organic corn oil]
1 Banana, medium, organic
1/2 C. Walnuts, chopped, organic
1 Tbsp. non-aluminum baking powder
1/4 tsp. Nutmeg, organic [grated or powder]
1/4 tsp. Sea Salt [or Kosher Salt, table salt]
1/2 tsp. Cinnamon, ground, organic
Cooking spray, organic with or without flour

Directions
1. Preheat oven to 425 degrees, F.
2. In a large mixing bowl, stir together oats and milk.
3. In second bowl, sift together flour, sweetener, baking powder, salt, and spices.
4. In the third bowl, combine egg, applesauce or oil, and mashed banana.
5. Add banana mixture to the to the oat and milk mixture, and walnuts, mixing thoroughly. Then add flour and spices little at a time, until incorporated.
6. Line muffin pan with liners, then spray them with cooking spray. Spoon batter into each muffin cup, until 3/4 full.
7. Bake for 12-15 minutes or until they are golden. Cool 5 minutes or more before eating. Great warm or cool.
