Ingredients

    5 lbs Fresh pumpkin
    1/2 c Almonds
    1/2 lb Firm Tofu
    2 med carttos
    2 stalks of celery
    1 can coconut milk
    3 Tlbs olive oil
    2 t Tumeric
    2 t salt
    1 t Ginger
    2 t cummin
    2 tCoriander

Directions

Saute veggies in oil until they start to soften. Add Coconut milk, spices and simmer until soft. (about 20 min). Can serve over a grain or eat plain.
