Ingredients

    2 tablespoons extra virgin olive oil
    1 large onion, halved and thinly sliced
    1 to 2 tablespoon curry powder
    4 zucchini, halved lengthwise and cut into 1 inch slices
    1 quart vegetable broth (can use chicken broth or water as substitution)

    Optional: cubed cooked potato, grated carrot, cooked rice, garbanzo beans

Directions

Saute onion and zucchini in the olive oil with curry powder in a large pot until tender. Add broth and bring to a boil. Cover, reduce heat to low, and simmer 20 minutes. Blend half the soup with a hand blender and return to pot. It will make a yummy soup with a bisque like texture. Sometimes I like it a little heartier, so I add cubed potato, or rice, or garbanzo beans for protien. If I want it a little spicier, I add a couple sliced jalepeno peppers to the onion when cooking those. Get creative!
