Ingredients

    One 15 oz. can low sodium black beans (rinsed & drained)
    One 15 oz. can low sodium navy beans (rinsed & drained)
    2 TB red wine vinegar
    2 celery stalks, finely diced
    1 small red onion, finely diced
    1 fresh tomato or 1/2 cup canned tomatoes, chopped, juice discarded
    2 to 3 TB extra virgin olive oil
    Salt & Pepper to taste

Directions

Mix all ingredients together in a bowl and refrigerate for an hour or two before serving.
