Introduction

Ingredients

3 medium zucchini
1/3 c. whole wheat bread crumbs
1 jar hormel bacon pieces
1 jalapeno pepper, chopped
1 can (4oz) diced green chiles
1/4 c. minced onion
1 small tomato, diced
1/2 c. shredded cheese of your choice
salt, pepper, basil, crushed red pepper, etc. to taste
Directions
1/2 zucchini = 1 serving (makes 6 servings total)
Preheat Grill.
Cut each zucchini in half length wise and place in boiling water 3-4 minutes. Scoop out pulp, chop, and squeeze water out using a strainer and paper towels.
In a bowl mix zucchini pulp with remaining ingredients except cheese. Season with salt, pepper, and your favorite spices to taste.
Stuff each zucchini half with the mixture and top with cheese. Place on grill on heavy layer of foil for 15-20 minutes or until tender and heated through.
